2 oz. Bacardi Light Rum
3 oz. Fresh Lime Juice
3 oz. Simple Syrup* (1/2 sugar 1/2 water)
2 1/2 Cups Lemon Lime Soda (Sprite or Sierra Mist)
12 Fresh Mint Leaves
3 Cups Ice Cubes
Combine ingredients in a blender with the ice. Puree all ingredients until mixture is smooth and slushy. Pour into molds, add popsicle sticks and freeze for 8 hours.
Bring water to a boil, remove from heat. Add sugar and whisk until all sugar has dissolved. Mixture should be clear in color. Bring to room temperature.
